Epoxy: Sanding help - "touchin' the glass"

I've reached the final stages of my Artic Tern 14 and am sanding the epoxy smooth. I keep "touchin' the glass" in areas before I get through the epoxy mottle (perhaps due to uneven fill coats, although I used a roller). What is the best way to handle this? Another full coat rollered on? Skim coat as in Nick's book? Varnish it as is? I'd hate to screw up now! Also, what do you folks recommend as a last paper grit before varnish? Thanks in advance. I've been a lurker for the few months building this boat, my first, and find myself totally hooked. This forum has been an excellent source of help and inspiration.
