I also make my Greenland paddles from a board of clear red cedar I just apply two coats of epoxy that has a fast hardener. I apply it out in the sun on a very hot day so it will cure really fast. As soon as it starts to become sticky, I wipe off all the surface epoxy. The paddle hold up very well and retains just enough of a rough surface so it won't slip out of my hands. My paddles look like they have been used, and they have. I also have put a bead of fast curing epoxy on the ends to prevent it from being damaged by all those rocks that seem to come out of nowhere at the most inopportune times.
