They say that a larger 1/4" radius cutter is okay on a 3/16" strip. You will still get the correct bead/cove joint as long as the router/cutter is aligned correctly with the center of the strip. You want to get them aligned to within 1/32" or better.

Go over and lift the three gallon epoxy kit you just ordered. That is where you are going to gain/lose pounds on your boat. 1/16" of cedar doesn't weigh very much. Also, with sandwich core construction, you gain strength by increasing the distance between inner and outer layers; you would be doing the reverse.

I would go ahead and get underway with 1/4" strips and look into ideas to reduce epoxy usage: i.e. seal coat, satin weave glass, good resin application... Everyone has their own slightly different take on these things. You'll figure out what makes the most sense to you. Good luck with it.
