Skin-on-Frame: A Newbie has some questions.

The Newbie has grey on the pumkin; has never constructed a boat before and design is out of the question. 1st I'm 6' 3" and 250 lbs. Construction of a Greenland first, then an Baidarka all from the Morris book. Will my size and weight be a problem; Could either of these boats be used for tourning say for 3 to 5 days? Can a water tight compartment be built; if so how can it be constructed? If weight is a prime factor should the design be modified by increasing the length and width of the boat? As it stands now the width is about 23 inches using the hips and two hand widths method. As previously pointed out by a kayaker that her new boat was very "Tippy". Will changes suggested increase problems with stability?
