15 - 18 years ago people did that but nowdays epoxy has proven itself as light years ahead of polyester because of it's flexability / ability to bond with wood.
Considering the time and effort in building a nice wood kayak, it's crazy to compromize at the last stage with polyester and save $50. You can get enough epoxy to do a kayak for about $110.
