The most accurate way would be to find builders by you and try out their boats.
Otherwise, you do it like a tailor makes a suit: you measure yoursrlf and find a design that fits your height, weight and shoe size. Individual adjustments to the seat, footbrace, hip braces, and other fittings can be made during construction so the boat fits you perfectly. You will also want to find a hull shape for the type of paddling you do most. While the Carolina fit you, that doesn't necessarily mean the boat is the best one for where you want to paddle.
