You cut an exact-size bulkhead, and cut the middle out
: (leaving a 1.5" or 2" wide ring that you glass into the hull aft
: the cockpit).
: You then cut another bulkhead (the "hatch cover") that is about
: 1/4" smaller all the way around. You can simply use thumbscrews
: through the hatch cover into T-nuts in the glassed-in ring.

Exactly what I was looking for...
I presume you mean that you cut the hatch cover maybe a 1/2 inch larger (not smaller) than the hole.
And for the mechanically illiterate, Like me,
a thumb screw and a T nut are pictured below.. I had to look them up to know exactly what was intended:
