I built the Morris Greenlander, and like your measurements, mine came out pretty wide. Now, when I checked out more traditional, authentic Greenland boats, it wasn't the length that was different, it was the beam. Morris calls for your hip width plus two fists held sideways with the first thumb knuckle poking out. I took that and came out with a 22" beam. Since I liked the stability of my Pygmy Arctic Tern (which is 23"), I went 23". But since my bow and stern are pretty pinched, I only have about 3" of freeboard. And at times, I get water from following waves off the side splashing over the deck, too. I wouldn't want it much lower, but maybe you do. If you do, all you'd need to do is go just a little narrower (say 21"?), and with your weight, you'll be right down there in the water.
The amount of reverse curve (pinch) you apply to the bow and stern make a huge difference in volume. If I was building another (likely), I'd have pinched the bow a little less and the stern a little more. It seems to work pretty well if I meet oncoming waves with my weight back, but I still get waves washing up the deck fairly far before they fall off the sides. That would also give me a little less freeboard in back.
