Hi Bert,
A lot of us don't have good access to AYC, so it would probably be easiest to ask Rob what he uses.
I think a big question is not how predictable AYC is, but how straight the grain is in the original boards. Not much runout = not much splitting. A lot also depends on your steaming skill...did you go to Bob's steambending workshop at SSTIKS?
