Material: Cypress Wood?

I Have A bunch of lumber (cypress) from an old barn . More than a hundred years old. The planks are about 2 feet wide or so and 5-6 inches thick some are over 25 feet long. I've cut A few into strips and it looks good and is clear and flexible. Now my question is would this be a good choice to build a kayak out of? I cant cut the big boards to easy the boards are just to big. Even cutting down the smaller ones into strips really makes my new Ryobi 10" table saw work HARD. But it is possible. I plan on making 2 boats one for my son and 1 for myself. Is cypress ok to use in a Kayak? I hope so I have enough to make lots. Thanks Chris
