Richard,
On steam bending, sounds like they are in the steamer too long.
One other thing I noticed when bending my Ash ribs is the way they are cut.
Did you use a bandsaw perhaps? Did you then run them through a thickness planer?
If you have any saw marks running across the rib it will break there.
The remedy for that is to make sure the ribs are smooth.
