Epoxy: epoxy and polyester on same boat?

I'm almost out of epoxy, and it can take awhile to order it in since it all has to cross the border and it is considered dangerous goods etc. So what I'm wondering is, will it matter if I just go to a local hardware store and buy polyester to do my endpours? Will the generated heat hurt the epoxy at the ends? I suppose I'll have to test it on the fillers to make sure it doesn't eat the foam (I'm going to use woodchips also).
Also, how critical are bulkheads? I plan on putting them in, but if I get impatient and just want to try the boat out, the wood/glass is still less dense than water and will float even if completely filled....um, right?? Or should I stuff a couple life jackets in the ends?
