Strip: Building a Franken-yak??

I have been lurking on this board for quite some time now as I have become bitten by the kayak bug. I picked up a used Mainstream Streak 10 footer for fishing and banging around on the local lakes. I have to say, I love being in a kayak. As natural progression goes, I now want to move up to something longer & faster. I am very comfortable woodworking so I am thinking of a strip kayak. I have a huge workshop 24 X 36 feet (unfinished basement)BUT 3 very small basement windows. The only exit to the outside is up the stairs to the main floor and a 90 degree left turn out the back door. My 10 foot Streak makes it up the stairs and out the door, but just barely. I know for a fact that anything longer will not make it out of the house!

I have seen plans for 2 and 3 piece kayaks. Basically most of the boat gets finished and then you summon up the courage to slice it in 3 parts to be re-assembled.

I am looking for opinions on this technique..
