Strip: Guillemot handling - please help

My wife has had her new Guillemot out on the water for the third time and seemed to be getting better at handling the somewhat loose tracking for the first half of the paddle (on flat water).

Then the last leg was with the wind and with a following sea (1-2 ft chop) hitting her at approx 7 o'clock. In these conditions she was having a terrible time getting pushed around by the waves, she kept veering off to the left as the waves seemed to be pushing her stern to the right.

My question is this, is there anything that will help keep her moving in a straight line, ie: adding a small skeg? Or is it simply a matter of spending more time in the boat and becoming a better paddler?

I was in a rental kayak (my Guilly L is not even close to done yet), and it tracked way too well, kind of like trying to turn a aircraft carrier :) I was experiencing a similar problem to her, but not nearly as bad.
