Ahhh, weather. I love it. Convection currents are caused by the uneven heating of the different surfaces of the earth. For a really good tutorial go to the link below.

As for times of day to paddle, the engine that drives the convection currents is the sun, so you will most likely have calmer airs and calmer seas in the earlier hours and the two hours prior to sunset when the sun is lower on the horizon.
