Strip: Wood glue or Epoxy

In reading the book by Nick Schade on "The Strip-Built Sea Kayak" I see he uses wood glue to edge join the strips. Yet many builder pages are showing epoxy for this. Which is the best way?

Wood glue seems easier to keep clean. But I would think it would leave a thin line between peices where the epoxy coating would not penetrate and be more visible.
