I have also put some time into a design of a rudder that would go into a slot and feel that at the point on the hull where the rudder is the flow would be not even close to be attached, very mixed. If you paddled in flat water all the time it may be a issue but then no need for the rudder.
After paddling with guys with the instant kayaks I feel the big issue for me would be the beach sand, they have lots of stuck skegs after the beach launches.
