I think a similar question came up here within the past few months. You might try searching the archives. Search for "paraplegic." I'm not sure if anyone had a really good solution. Depending on the types of water you were planning to paddle on a large cockpit open boat like the Chesapeake Light Craft Mill Creek might be suitable and easy to enter and exit.
