Hi Marie,
A dark wood that works exceptionally well for strip bulding is Peruvian walnut. Not only does it work easily but unlike American black walnut, it does not fade easily. It is usually very uniform in color as well. However, note that it should be air dried rather than kiln dried as the kiln dried material tends to have a greenish grey tinge that is not apparent until cutting into it.
I've used this wood for dark accents for over ten years and have been very pleased with it.
I've included a photo of a project I'm working on that uses quite a bit of this wood.
