Ok, should restate this anyway, the other reason for more than 4 coats is you don't gain enough UV resistance that way, the film thickness is just too thin. So takes multiple coats, though you lose a fair portion of that with sanding.

Of course I'm used to varnishing boats that sit for a season in the sun rather than a few hours, so for them the UV resistance is of more importance. Last boat I did had 14 coats and used as I remember around 24 quarts of varnish.
