Hi Marie,
I haven't done this but have some thoughts on it. You could edge glue the strips on the flat, on an oversize outline of the panels. Trim the panels to the correct shape and 'stitch' them together as per S&G. There might be limits of panel twist for the stitching as cedar is softer than ply.

If you know the station shapes of the outside of a hull, offset them the thickness of the cedar-strip panels and make a series of molds. You can trim over-sized panels using the molds to determine where to trim. Overlap joints between the lower and upper panels would work with this method.
