I have similar problems, but a bit worse.... 6'5", 200 lbs, and size 16 feet. (Thats U.S. size 16).
I'm working on my first boat build right now, a skin on frame Greenland kayak following the book by Robert Morris. I just wrapped up the wood frame, and I'm waiting on the arrival of the fabric.
I chose Morris' approach because the critical measurements are all done according to body size (fathoms, fistmeles, etc.) instead of a tape measure. Of course, this also meant I wound up with a boat thats overall 19.5 feet long.
When I sit in the open frame with tennis shoes on, I have plenty of room. But I was careful to keep checking foot room at every design decision point.
