Couple things, epoxy gel coat is not easy to find, most is polyester and polyester doesn't stick to epoxy well.

Secondly gelcoat is designed to go into a mold, it obtains it's nice smooth surface from the mold. It was never intended to be applied to a surface externally. It can be done, but it comes out as a fairly rough surface that has to be sanded smooth then polished to get a nice flat smooth surface. Suspect that won't work with the idea you have.
