Couple problem come up if you try to not pre-coat the wood.
1) the wood will take epoxy at different rates, so it's easier, specially the first time you've done it, to get areas that are resin starved.

2) if there is a chance (usually always is a chance) that the shop temperature will change while you're glassing, the air in that's trapped in the wood can come out thru the wet epoxy causing bubbles, called outgassing.

Precoating eliminates both of these problems.
