Strip: kayak size and design

I have recently become intrigued with strip-built kayaks and am looking into building one for my dad for this coming christmas. He is 5'7" about 170lbs. He would be using it on a large lake with reletively heavy motorboat traffic. He would use it to tour up and down the lake, potentially a little fishing, and getting out in the open water. From what I have read, it seems a wider beam (24"-26") with relatively vertical sides, a high deck and large opening. I am thinking 17'-18' with two holds. I would like to put on a rudder, and want it to be able to track and be stable. Sounds like a pretty big wish list, but there has to be an ideal design. If any of you know it, it's Lake George in New York. Thanks for your help. ~ajd
