I'm afraid that I may not have the best example for your use. I the past three kayaks I have built were made out of 3mm ply. This one also has only 3/16 inch thick strips on the deck. Using this lighter material has given me a kayak that is still under 26 pounds before outfitting.

Regardless of the material I always use the same glassing scheme, which is 6 oz E-glass on the inside and outside of the hull and 4 oz inside and out on the deck.

I can't believe that the different deck height would significantly alter the weight of the kayak and I am sure you would be delighted at how the high deck looks when you are finished. Nick really did design a beautiful deck shape for this kayak.
