I recommend you find a good book or two on wood kayak building (like the one from the host of this site perhaps). It will answer most if not all of your questions. It should help with building your kit as well. There is a lot of ground to cover with your questions and it would take quite an effort to describe everything that would be helpful to know in a discussion list such as this. By the way, there is more than one way to build a coaming. You might search this site to see what others have done. Also, it's much easier to help someone when they have photos of the project.
