It's been done, numerous times - check out Yost's gallery section (for wood frames).
The 6 section Sea Otter my gf built did indeed have some frame distortion between cross sections, but not much, and mostly along the single deck stringer. This distortion occurred as we were sewing he skin, which we pulled very tight. There wasn't a whole lot of shrinkage noticeable after that.
With the 8 cross sections of the Sea Cruiser, you shouldn't have a problem - my Sea Rider didn't have any distortion, at all.
We skinned these boats with 12 oz nylon, from George Dyson, which is pretty heavy material.
