Not sure if this is of use to you but i had good luck using nylon stretch cord
as rudder cables...i used standard rudder pedals blocked so they could only slide an inch or two and attached the nylon cords to those under tension.

This resulted in barely having to move your foot to turn and the rudder was self centered when both feet were off the pedals and when both feet pushed both pedals at same time.

Only draw back is the pedals always have a little bit of tension..your feet will feel it after an hour or so but the tension is pretty light i don't think it's really an issue.
