Normally wire is used for rudder controls, but mostly because it's relatively cheap. There are better materials, synthetic lines, that work as well and are lighter, also usually double or more on the price.

Btw, the gas pedal rudders usually use a bungie to keep the rudder cables tight, the bungie though is on the front side of the pedals, not inline to the rudder.
