S&G: Glassing inside of panels?

Since glassing the inside of a s-n-g hull is harder than the outside why not glass the insides of the hull panels while they are flat on the bench?
When you stitch it up get a solid mech. bond, use a decent fillet and two strips of 2-3" glass tape on the inside seams.
By glassing flat on the bench you could lightly clamp and press any excess resin out of the glass. Would this offset the weight of two strips of glass tape? I have done this with skegs and bulkheads and it worked well.
thoughts?
Heading out to buy the ply and thinking of different ideas.....always hated glassing the insides, seems you cannot avoid a few small bubbles...
