My experience is that the thin strips are strong enough for a kayak that is to be handled carefully, like a competition kayak. Increasing fiberglass weight or number of layers, increases weight more than stiffness/strength and is an inferior alternative to using thicker strips in the first place.

To use strips this thin you normally need to increase the number of molds - at least 18 for a normal length kayak. The thin strips are too flexible to bend correctly over larger mold distance. And the only remedy for the resulting uneveness is a lot of sanding...
