The kayak design, at this time, is about 30 inches wide. With a guess at boat weight of 55 lbs, 45 lbs for cargo, and the weight of the dog and myself it is showing a draft of 4.5 inch. With separate cockpits I can use a spray skirt and bulkheads to hopefully minimise the water that would get in if we run into trouble. I may have to build it with a large open cockpit to figure out the seating arrangement. But it might be easer to just buy a canoe.
