If one can build at home one tends to go out and do a half hour here and there that one wouldn't always if the project is more distant
If you are building a stripper then it is not easy to move it until the hull is glassed, at least on the outside, so I would push the job to that point before relaxing just in case you have to move it.
Otherwise a hybrid (Ply hull strip deck) and you can up sticks anytime you want really. You can't see the hull from inside the boat anyway so it can be a good option, especially for a first boat.
