As far as traditional goes, steam bending is really not that hard. Have no fear of it. It's also WAY faster and less messy than lamination or gluing plywood. I really wish I had a better photo for you, but I haven't had much time or the inclination to be on top of a photo-sharing account. Any of the books on SOF building will have some detail, but there's a photo of me doing it at the link. I'm sure that with your skills you can figure it out from the photo. Mark Starr's book has an even better jig that I'd take the time to build if I were going to do more than one coaming of the same size. There is also a lot of good instruction at Skin Boat School's web site.
