Yep the sheer strip does define the upper edge of the hull, not the curves though. Stripping the hull isn't like planking it, the strips can go in any direction you desire. It's basically a pretty core to a composite sandwich.

An advantage to starting stripping at a place other than the sheer is that you can use the strips applied to help force the strips into position as you neer the sheer. It will take a bit of planning though unless you're not worried about the pattern of the strips. Depends almost entirely on what if any pattern to the strips you want.
