I wouldn't hesitate in taking a foot off of it if that's where you want to go.

The big question is at what expense. You could take 2 feet off of it and it would be fine but you will feel the difference, but who cares? There's people paddling around 14 foot kayaks that are totally happy. When you start taking too much off, you may find yourself starting to shim the forms here and there to get fairness.
