Do you mean the keel strips? (I think this is what you are referring to - the strips that run along the centre line.)

I put these in when I was within a strip-width of covering the end forms. I got this tip from Ross Leidy's http://www.blueheronkayaks.com/ website. It meant there was a little bit of end form to attach the keel strip to, and plenty of cove in the adjacent strip to jam it into to effect the required twist.

The picture below was taken to show something else, but it shows the stage I reached when I added the keel strips. The strip on the left side is the last added before the keel strips, so you can just see a little of the end form still visible.
