Material: DIY Kayak using foam as the core

I would like to build my own sit on top kayak. The idea is similar to how surfboards are made. Styrofoam blocks glued together, cut to shape to form kayak body, sanded, epoxied and then fiber glassed. Unlike fiberglass kayaks, I dont intend to scoop out the foam material.

Has anyone tried this yet? Do you think this can be done?
