Well...depends. You need normally at least 3 coats for reasonable UV protection. How many more depends on a couple things, primarily how well the boat was prepared prior to varnishing and what kind of finish you expect. I've done acceptable varnish jobs with only 3 coats, I've done a couple with as many as 14, some have used more for a museum quality finish. There's a reasonable limit for a kayak that will be used instead of a piece of furniture to only be looked at :)
