Strip: Night Heron Hi-Deck or Expedition Single?

I built a Redfish "Spring Run" last year as my first strip boat and fell in love with building and paddling strip kayaks. I'm nearly finished with an One Ocean Kayak "Cirrus SLT" S&G for my son and am planning my next strip boat as a winter project.

I need some help with a decision between 3 boats; Night Heron Hi-Deck, Guillemot, Expedition Single and am hoping some of you vets of strip boat building can weigh in. Here's the main concern. I'm 5'11, 160lbs and have size 13 dogs. I've barely got room enough in the Spring Run for my feet when wearing booties and need to make sure the next boat will accommodate them. CLC lists the Night Heron hi-Deck as fitting up to size 13, the Guillemot up to size 12 and the Expedition Single up to size 14. My use for the boat will be primarily day trips in varying conditions and occasional overnite or several day camping trip. I want some manuevariblity but want reasonable tracking as well. I'm leaning towards the NightHeron Hi-Deck.

Any perspective??
