Pictured below is something that has worked well for me.

The strip back-rest is a bit of deck left over from an old cockpit cutout with some camp-mattress glued onto it. Joining the backrest to the bulkhead is a rubber windsurfing universal joint which allows the backrest to adjust to the optimum angle.
