Nice paddle! With Kevlar's bullet-proof reputation maybe you can become a new super-hero reflecting bullets with your paddle!!!

As for the UV, I really LOVE Epiphanes' varnish, but honestly with its honey hue it wouldn't be best for what you're doing. I think it looks best over wood. I would suggest an automotive clear coat with a built-in UV. Some people on the board have recommended a Dupont clear with a UV that they sprayed their kayaks with.

For the tip of the paddle I kind of like the contrast of the darker tip. Maybe you should use carbon fiber for the tip?
