I see Mike already replied, and I agree- multiple layers, each layer being done separately. If I do another boat I will use the 3.25 ounce in two layers and then probably would put a football of another 3.25 only because I abuse my kayak on rocky and sandy beaches and reefs. (Before I used 6 ounce with a football of 6- could have used 4 for the football. 6 was overkill.) I like the suggestion given on this board of two layers of 3.25 ounce. In theory it will be stronger than one layer of 6.5 ounce. Also it would be much easier to wet out. 4 ounce is a dream to wet out. I can only imagine lighter fabrics. I used one layer of 4 ounce on the deck this time with no problems. I don't see the need for more on the deck. It's the hull that takes a beating. I use 4 ounce on surfboards with no problem- both foam boards and wood. It flexes a bit on a board, but on a kayak with another layer underneath which you don't have in a board it's plenty.

Again, on this boat I intended to use 6 ounce and the guy sold me the wrong stuff. I believe it's 9 ounce. Definately not 6. Anyway I should have trusted my instinct which told me this stuff was too heavy for 6 ounce but now that it's on I just left it and didn't do the football. The only regret I have is the keel which needs a little more protection just on the stern.
