Well if you change the hull shape then you're building an experimental kayak, the design is only good if you follow the plans.

Personally I like V bottoms and never found that boat to be tender feeling in the least. Of course I'm used to fairly skinny kayaks, everyone's feeling is different. I've spent a bit of time paddling the multichine one the class built, nice boat overall, not as slow as you'd think for one so short. Actually I've got a round chine version that's untried in my shop (modified Yost design).

Most of my boats though are V bottoms, you get used to the feel. It's hard to make truthful generalizations about boat design that apply to every boat, they usually arn't true.
