Kayak Foundry runs under Linux using WINE.

I was under the impression that it can also be made to run on a Mac.

You say you want a 20' x 20" fast kayak. The Mystery is a 20' x 20" fast kayak. What is it about the Mystery that you don't like?

A full knot of extra speed might be a bit ambitious. A comparison of the drag graphs for the Great Auk and the Mystery suggest that half a knot might be more realistic.
