Hi Stephen,
It depends on whether it's an internal or external strongback.
For me, the highest point of work should not be higher than the solar plexus.
I made a box-beam s'back ala Rob Mack, the external type and the supports I made are only 25" high, this puts the forms at about waist height at the gunwale line.
The supports are simple, two "uprights", a ply webbing between them at the top and a flat plate on top for fastening to the s'back. The uprights are canted, / \ for stability but not so much to get in the way.

A handy thing about extenal s'backs is that you can fasten 'shelving' to the supports for holding strips or tools.
