I think your difficulty may lie with the stems of the Chuckanut being more plumb than Greenland style boats, where skin is typically sewn in place. That is, more gradually tapered, pointy stems allow more room to cleanly pull slack out of the fabric.

While my experience has been with nylon (and, I'm about to do polyester), I have noted this difference in stem shapes. With more plumb sterns, I have stitched them, trimmed to about a half inch, then done a cross-over whip stitch. This may be the solution for you.
