One possibility that can save you a bit of work is to scarf the plank before you rip the strips. I've done that (both ways) and the scarfs hold together surprisingly well.

BTW, I recall that Dan Caouette mentioned using 4" wide strips on the Black Pearl hull. Definitely check out his build pictures for some tips.

I've got a set of BP plans staring at me here, but I can't decide whether to use plywood for the hull, or strips.
In either case, chine stringers will probably be required.
I built the Black Pearl-style deck on my last boat, and it is a very twisty thing, with that big curved bulge for the cockpit/leg area rising from the flat deck. You should be able to do the curvy sections with 8 foot strips, and leave the scarfs on the flatter parts. Narrower strips can help tame the curves a bit, and of course you can hide a lot of fairing (or even epoxy filler) under the paint.

I used to live in Ontario, so I know a bit about winter. IMO, on a nice sunny cool day it can be OK to work outside. (and, no bugs.....)
For ripping strips you want the saw set up properly with featherboards, etc. so it is mostly just a matter of propelling the board through the saw (with a good sized push stick).
