Hi Mike,
This bevel is ,obviously, complimentry to the one for the deck,so share the angle equally,with the deck's bevel.The angle will likely change along the length.I use a shear clamp strip, attached to the hull, to help sit the deck on the hull at glue up time.My principle is simply "do as much preparation as is possible to make the tricky processes go smoothly.
On my current build [Petrel]I am winging this angle as my strip for the shear is only 10 mm wide,the next is 5 mm wide and the next is 10 mm so as for them to bend "up" to the bow and stern.It is entirely possible to sort this bevel detail out "later",given that you have left a small amount of material proud of the shear marks where needed to do this with.More work, for me, later....
